Shortbread cookie recipe:
Ingredients: 1 cup butter or margarine softened, 2/3 cup granulated sugar, 1 egg yolk, 1tbsp. vanilla, 2 1/2 cups all purpose flour.
Directions:
In a large mixing bowl, beat butter and sugar until fluffy (about 5 minutes) Add egg yolk, flour and vanilla and beat and additional 5 -7 minuts until very fluffy. Wrap dough in plastic wrap or waxed paper until firm enough to roll out (several hours) Roll out dough 1/4" thick on a lightly floured pastry cloth. Cut cookie. Now bake at 300 degrees for 12-15 minutes or until cookie is evenly brown. Decorate with ornamental icing.
Helpful tip: You want to make sure that you use a cookie dough recipe that does not have an expanding dough or a dough that spreads out. Butter based doughs will tend to spread and should not be used if you want to retain the cookie cutter shape......Have FUN!
